The name of the animal in each of these subtitles technically doesn't need to be capitalized.
Side note: They are also capitalized in one or more journal entries (quest stages and quest objectives tabs), but since a variable is used to determine the type of pelt generated in the text they're going to be capitalized in the journal no matter what. Plus, I doubt you'd want to mess with objective quest text even if they weren't being auto-generated since the developers tend to capitalize most every word with more than three or four letters in most cases anyway (just like we've discussed before with FO4).
