This was the result of the fix that was done back in USKP 2.0.5 to stop Oengul War-Anvil from offering Queen Freydis's Sword for sale after specifically telling the player the sword would be given to Ulfric to put on display.
Similarly I don't think it makes logical sense for Frida to tell you about the ring, making such a deal out of it's significance to her, only to then casually let it be sold back to you later on as though that was perfectly normal. So technically speaking this fixes that issue as well.
That being said, it probably does warrant somehow putting the ring somewhere that's accessible later if you're intent on stealing it from her, but IMO it should definitely not end up on sale because that makes zero sense.

I'd say that closes the issue then. The ring does have a disabled reference in The Mortar and Pestle, so the devs may have meant to make it available for stealing after the quest. I don't think the location stuck on top of a shelf makes a lot of sense, though. It should at least be near Frida's bed.
Unfortunately due to how the vendor system works in the game, it can't be anywhere inside her shop/house or she tries to sell it. Literally even right after you've returned it to her. So this isn't something we're going to set up given that it's very clear from her dialogue that the ring is too important to just turn around and casually sell.
